Broccoli Rice

Ingredients
2 cups Minute Rice Brown Rice1 can Fit & Active (Lite) Chicken Broth1 cup Frozen Brocoli Florets1/2 cup Kraft 2% Mexican Cheese blend1/4 cup grated Parmesan Cheese2 TBS Parkay Cholestoral Free butterSalt & Pepper to taste
Directions
1) Cook Minute Rice according to package directions. Use chicken broth instead of water and measure out accordingly. (I always use the whole can of broth and just add a bit more rice.)

2) Microwave broccoli till done. Drain very well and slice into smaller pieces.

3) When rice is done, add broccoli, mexican cheese, parmesan cheese, Parkay butter, salt and pepper.

Makes approx. 6 3/4-cup servings

    In the interest of lowering the sodium content, I used the correct amount of water and a little poultry seasoning in place of the chicken broth. It turned out very well. - 8/30/10
