Fresh Pico de Gallo

Ingredients
sweet yellow onions, cucumbers, radishes, tomatoes, jalapeno pepper, cilantro, & salt
Directions
Start by cutting onion into small pieces, put in large bowl. Squeeze lemon juice over onions. Cut cucumbers into small cubes, put in bowl on top of onions and squeeze lemon juice over. Do the same with radishes, and do not mix until complete. The tomatoes can be blanched to get the skin off and cut into small pieces, or I usually puree them w/skin on along with the cilantro, seeded jalapenos, and salt and pour over the top ~ then mix. Taste and add salt according to your preference.
