Very hearty Dahl

Ingredients
Large pot1 onion, cut into chunks2 cloves garlic, crushed1 tbsp curry powder or paste1 tbsp turmeric1 tbsp cumin1 tbsp garam masala1 tbsp coriander (dried)a few tsps Tabasco or chilli sauce2 tbsps lemon juice1 tbsp oil1 cup lentils (or drained from tin)500mls vegetable stock (or 2 stock cubes dissolved in 500mls water)1 can diced tomatoes1 can lite coconut cream or coconut powder3 potatoes, cubed300gms silverbeet leaves
Directions
1. Heat oil in large pot and add onions, garlic and spices including the spicy sauce. Fry these together for about a minute.

2. Add all other ingredients and stir. Bring to the boil and then turn down to simmer - about 50-60 minutes.

3. The dahl should reduce into a creamy consistency - keep stirring and simmering until thickened - salt and pepper to taste.

4. Serve with basmati rice and naan bread (extra calories, of course!!)
