Zucchini Carrot Mini Muffins

Ingredients
2 cups shredded zucchini1 cup shredded carrot3 eggs1 tsp vanilla2/3 cup olive oil1/3 cup applesauce1 cup brown sugar1 cup white sugar1 cup whole wheat flour1 cup white flour1 tsp salt1 tsp baking powder3 tsps cinnamon1 tsp nutmeg1 tsp allspice1 tsp cloves3/4 cup walnuts, chopped
Directions
Oven to 350. Mix wet ingredients. Mix Dry ingredients Separately. Mix them together and put in well greased mini -muffin pan. You can also use a mini loaf pan with more cooking time added (makes 6 loaves). Enjoy!
