Grilled Chicken W/ Vegetable Couscous

Ingredients
4 Chicken Boneless Skinless Breasts1/2 tsp. Grill Seasoning of your choice1 T olive oil1 large Onion, sliced3-4 medium Zucchini, sliced1 medium Carrot, diced1 large Red Bell Pepper, sliced1 cup Fat Free Chicken or Vegetable Broth1/4 tsp. Grill seasoning1 cup water1 cup dry CouscousSalt and Pepper to taste1/4-cup cilantro leaves
Directions
Season Chicken Breasts with grill seasoning and salt /pepper. Grill and set aside. After 10 minutes to rest slice chicken into 1-inch strips.


While chicken is grilling, heat Olive oil in sauté pan. Add onion and cook until translucent. Add zucchini, carrots and red bell pepper. Sauté 5-7 minutes or until fork tender. Add 1/4-tsp. grill seasoning and salt/pepper to taste. Mix and remove from heat.


Bring broth and water to boil. Place couscous in a large mixing bowl. Pour boiling water on top of couscous. Stir to mix only. Add vegetable mixture on top of couscous. Cover bowl with plastic warp and let stand for 10-15 minutes. Fluff mixture with a fork.

The grilled chicken can be mixed into couscous or served on top. Garnish with cilantro leaves. Can be served hot or chilled and served cold.

    Couscous is a coarsely ground semolina pasta while quinoa is a grain. Couscous cooks quickly while quinoa needs to be cooked more like rice. Hope you enjoy the recipe and thanks for commenting. Jackie!!!
