Vegan Swiss Chard and Mushroom 'Quiche'

Ingredients
oil1 small onion, diced2 cloves garlic, minced1 1/2c mushrooms, chopped, plus one sliced to place on top of quiche1 bunch swiss chard chopped1t salt1/2t pepper1t fresh thyme1/2c walnuts1/4c soy milk1lb firm tofu, drianed1 pie crust*
Directions
Preheat oven to 350F. In a large skillet, saute the onion and garlic in the oil until tender. Add the 1 1/2 cup of mushrooms and swiss chard, saute until the chard has wilted.

Transfer the cooked mixture to a food processor. Add all the other ingredients except the pie crust. Process in food processor until smooth, you can have some chunks if you prefer. Using a spatula, spread the mixture into the pie crust. Smoothing the top. Place sliced mushroom on top of the smoothed mixture. Gently pressing down, brush the mushrooms with a little oil. Bake for 45-55 minutes until quiche is firm and crust is golden. Enjoy.

*If using a store bought pie crust. Check the ingredients. Some use lard.
