Basic Coconut Milk Based Vanilla Ice Cream

3 c. unsweetened So Delicious Coconut Milk Beverage.5 c. lite canned coconut milk3/4 c. granulated vegan sugar1 tbs vanilla2 tbs arrowroot flour
Mix arrowroot into 1/4 c. of the coconut beverage and set aside.
Mix remaining coconut beverage, coconut milk and sugar and heat to just barely boiling. Turn off heat and whisk in the milk/arrowroot slurry. It should begin to thicken a bit immediately.
Allow mixture to cool in the fridge.
Add the vanilla and whisk well once cool.
Pour into your ice cream maker and process according to the instructions for your particular machine.
Makes @ 8 1/2 c. servings.

I hope you like it! This has been my best textured attempt thus far. Much creamier than the almond and coconut version I was making before. :)
