Quick and Awesome Pizza Crust

Ingredients
1/4 C. warm water2.25 tsp yeast1 tsp sugar1 C. warm water1 tbsp Olive Oil1 tsp salt1.5 c. wheat flour1.5 c. white flour (use any combination of flours to add up to appx. 3 cups)1/2 c. Cornmeal
Directions
Combine 1/4 c. water, the yeast and the sugar in a medium bowl. Let stand 5 minutes. Add the 1 c. water, the olive oil, and the salt. Add 1 c. flour, stir, add 1 c. more flour until the dough pulls away from the sides of the bowl. Add a bit more flour until the dough isn't too sticky, then transfer to a floured surface. Knead using the rest of the flour, until the dough isn't too sticky and holds together well (appx 8-10 kneads, not a strict rule). Prep a pan (I use airbakes) with cooking spray and a healthy sprinkling of cornmeal. Form the dough into a disc, place in the center of the pan, and press the dough into a circle or square, keeping a raised crust around the edges if desired. Sprinkle a little more cornmeal on the top, as well as Italian seasoning if desired. Bake 12 minutes. Remove, add toppings, and bake until toppings are done according to taste. Makes 8 slices, nutritional info is for 1/8 pizza.
