Thai Coconut Curried Chicken with New Potatoes

Ingredients
1 tsp sesame oil1 lb boneless, skinless chicken breast cut into small pieces1 medium onion, diced1 medium red pepper, diced1 TBSP reduced sodium soy sauce1 TBSP curry powder2 tsp coconut extract1 TBSP arrowroot powder6 small new potatoes, cut into small pieces1 package frozen spinach, thawed
Directions
Add oil to skillet and heat over medium heat, add chicken and cook until browned.

Remove chicken and set aside.

Add onion, pepper, soy sauce and curry powder, stir fry to soften onion.

Combine 1 3/4 cup water, coconut extract and arrowroot powder.

Add to skillet and bring to a simmer.

Add potatoes and chicken to pot and simmer until potatoes are tender about 10 - 15 minutes.

Stir in spinach, heat through and serve.
