Lentil soup

Ingredients
Ingredients:Lentils, dry 1.5 cup Onions, raw, .5 cup, chopped Carrots, raw, 1 cup, thinly sliced Celery, raw, .5 cup, diced Garlic, 2 tsp Water, 4 cup Salt, 1 tspCayenne Pepper, 1/4 - 1/2 tspCook all above ingredients for 30 mins, bringing to a boil, then reduce to simmer, covered. Then add:Diced Tomatoes - garlic, basil, oregano, 1-15 oz canCook 10 mins, then add:Fresh Zuchinni, quartered and sliced, 2 cupsfresh Spinach leaves, if desired. 1-2 cupsCook 10 mins.
Directions
Makes 8 servings of 1 1/2 cups each

Wash lentils
In one pot, place lentils, onion, carrots, celery, garlic, water, salt, and cayenne pepper.
Bring to a boil, reduce to simmer, covered
Cook at simmer for 30 mins

Add tomatoes, simmer 10 mins
Add zuchinni and spinach, simmer 10 mins

add more water or broth if the soup is too thick.
