Sauted Beet Greens

Ingredients
2 tbsp olive oil1 small onion, sliced1 clove garlic, minced1/2 lb. beet greens1 tbsp. sugarRed pepper flakes to taste2 tbsp. cider vinegar
Directions
1. Heat olive oil on medium heat. Add onions and cook until soft, about 5 minutes.
2. Add garlic to pan. Add 1/4 cup of water, and stir. Add sugar and red pepper. Bring to a boil.
3. Add greens to pan, stir, and cover. Lower heat and simmer until greens are soft (5-15 minutes).
4. When greens are soft, add cider vinegar. Serves 4.
