Macaroni Salad - Hold the Mayo : 1 Point/Serving

Ingredients
2 c. macaroni (1/2 lb)3 eggs1 medium onion, chopped fine30 olives (1/2 c. chopped)1/2 c. olive juice1 green pepper, chopped2 celery stalks, chopped
Directions
1. Cook macaroni according to package directions.

2. Boil eggs and dice. You may want to save one egg to slice into wedges to decorate the top.

3. Drain macaroni, but DO NOT RINSE. Mix olive juice into hot macaroni. Add onion, olives, eggs, green pepper and celery and mix well. Salt and pepper to taste.

Note: Mom's recipe had 1 1/2 c. mayonnaise, 3 T. sugar, and 1 1/2 T. mustard. What were we thinking when we cooked like that?
