Carrot Cake muffins

Ingredients
150g grated carrots2 medium eggs100g soft brown sugar5 tbsp sunflower oil100g self raising flour1/2 tsp cinnamon100g dried fruit such as raisins
Directions
Makes 10-12 muffins
Preheat the oven to gas mark 5
Mix the egg and sygar together and beat in the oil. Add the dry ingredients and spoon into muffin cases
Cook until the muffins are just firm to the touch.
