Ingredients
*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.5 cup (remove)Basil, 5 leaves Parsley, 1 cup chopped*Lemon Juice, .5 cupScallions, raw, .5 cup, chopped Olive Oil, .25 cup Mint, 2 tbsp choppedsalt and pepper to taste, 1 serving Garlic, 1 clove pressed
Directions
Cook quinoa according to package instructions. Rinse well first. If you buy bulk, 2 C quinoa + 4 C water. bring to boil, simmer tightly covered for 12-15 min. Allow to cool. Combine all other ingrediants. Then toss lightly with the quinoa. Chill for at least 1 hour. Chill time not included in prep time.
