Parmesan Zucchini Pancakes

Ingredients
3 medium-sized zucchini, about 2 cups1/2 small red onion, minced1 garlic, clove, crushed1 large whole egg1/3 cup all purpose flour1 tbsp chopped fresh oregano or equivalent dried.dash salt and pepper3 tbsp grate parmesan cheese, reduced fat3 tbsp olive oilpam cooking spray
Directions
Grate Zucchini into a small bowl. Toss with the minced onion and garlic. Beat in the egg, flour, oregano and cheese. Season. Heat oil in a large heavy skillet over a medium-high heat. Drop the mixture by large tbsp into the skllet, pressing each one down with a spatula to form a pancake. Fry until crisp and golden brown turning once. About to 3 minutes per side.

When frying instead of using 3 tbsp olive oil I reduce it to half and use Pam.
