Frittata - Veggie Sausage, Broccoli, Tomato, and Basil

Ingredients
2 Morning Star Original Sausage Patties - chopped2 medium red tomatoes - chopped2 cups Best of the Egg Substitute6 tbsp of nonfat milk4 tbsp of parmesean cheese2 tsp dried basil1/2 cup to 1 cup chopped broccoli
Directions
Preheat oven to 350 and use nonstick cooking spray in an 8x8 baking dish.

Cook frozen sausage patties (I like to do it in the toaster oven so they get crunchy) and heat up frozen broccoli. Chop cooked sausage patties. Let cool.

In a medium mixing bowl combine egg substitute, tomatoes, milk, parmesean cheese, and basil. Mix well.

Combine egg mixture with cooled chopped sausage patties and chopped broccoli. Pour into baking dish.

Bake for 30 minutes at 350 degrees. Let cool. Makes six 3.5 inch x 2.25 inch servings which are 1.25 inch thick. Use a bigger pan and you can have more servings of a smaller size.

Tip: I thaw my frozen serving then heat up in microwave wrapped in a paper towel to remove excess water from it being frozen.
