Lemon Pepper Salmon Patties

Ingredients
1 14 3/4 oz can of pink salmon1 large egg15 Wheat Thins, tomato & Basil flavor, finely gratedlemon juiceLemon pepper seasoningGarlic Salt
Directions
Beat egg and add crushed wheat thins, lemon juice, lemon pepper seasoning & garlic salt. Mix well and make into 6 patties.

Have heavy skillet or griddle every hot and coated with non-stick spray or 2 tbsp of light virgin oil. Place patties on hot griddle and cook approximately 3 minutes per side.

Cook quickly will create a crisp crust like on the outside and keep the inside moist.

Serve with regular ketchup, heated. try adding lemon juice, balsalmic vinegar and a touch of soy sauce to the ketcup before warming in the microwave. the spicy ketchup adds a great additional flavor.
