These are the ingredients for a HALF recipe. Makes 12 small muffins1 C almond flour1 t Baking soda1/2 t salt1 1/2 t cinnamon1/2 C chopped dates1 1/2 bananas (I used 2 and it worked fine)1 1/2 eggs (I used 2 and it worked fine)1/2 t Apple cider vinegar1/8 C coconut oil3/4 C shredded carrots3/8 C chopped pecans
This HALF recipe makes 12 small muffins.
1) Combine Almond flour, baking soda, salt and cinnamon in a small bowl
2) Combine dates, bananas, eggs, vinegar and coconut oil in a food processor.
3) Mix wet and dry mixtures together.
4) Fold in carrots and pecans.
5) Spoon batter into greased or paper-lined muffin tins. They don't rise much so you can fill them fairly full.
6) Bake at 350 degrees for 25 minutes.
7) ENJOY!
