Grandma's Refrigerator Bran Muffins

Ingredients
2 cups 100% bran cereal (like All-Bran)2 cups boiling water1/2 cup margarine1/2 cup applesauce3 cups sugar4 eggs1 quart buttermilk (can use buttermilk mix)5 cups flour (I use 2 cups whole wheat flour, 2 cups white flour, and 1 cup rice or oat flour)5 teaspoons baking soda1 teaspoon salt4 cups grapenuts cereal
Directions
1. Pour the boiling water over the bran cereal and let sit.

2. Blend margarine, applesauce, and sugar together.

3. Add eggs and buttermilk and mix well.

4. Mix in flour, baking soda, and salt.

5. Stir in grapenuts and bran cereal/water mixture.

6. Let sit a few hours to a week in the refrigerator. (Also freezes well)

7.Pour into cupcake liners and bake at 400 for 15 minutes.

Makes 48 muffins.
