Low fat strawberry bread

Ingredients
2 cups fresh strawberries, sliced3 1/8 cups all-purpose flour 2 cups white sugar 1 tablespoon ground cinnamon 1 teaspoon salt 1 teaspoon baking soda 1 1/4 cups unsweetened applesauce4 eggs, beaten
Directions
Preheat oven to 350 degrees F.
Spray two loaf pans with cooking spray.
Sprinkle strawberries lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend applesauce and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened.
Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.

    I used 2 cups flour, 1 1/8 cups quick oats. Splenda in place of sugar and a touch more cinnamon. Very good flavor. I may try adding vanilla extract or even using yogurt in place of the applesauce. - 11/7/10

    Instead of using all flour, I did half flour and half quick oats. I also used a bit more sugar and cinnamon. I added a glaze on top of powdered sugar, milk, and strawberries. Very good. - 3/24/09
