Lime Rice

Ingredients
1 cup Jasmine Rice (I use Safeway 365 Organic brand)1.5 c Water - Filtered if availableJuice of 1 limeZest of 1 lime 1/2 tsp salt (optional & not included in nutritional facts)Cilantro (optional as well. Add to taste)
Directions
Bring water, lime juice & zest of lime to a boil
Stir rice into boiling water
Cover with a tight fitting lid & cook for 18-20 minutes
Remove from heat & let stand for 5 minutes
Fluff with a fork
