Cod Ocean Soup

Ingredients
1 pound Cod fillet4 tsp of margarine (reduced in fat)1 onion, medium, diced1/2 cup celery, diced2 cups potatoes (or 1 cup potato, 1 cup sweet potato)1/2 cup carrott, sliced2 cups boiling water2 cup lactose free milk2 oz Cheese (velveeta type)1 tsp SaltGround black pepper, as desired
Directions
Cut the cod in easy-to-eat bites
In a pan, melt the margine and brown the onion and celery.
Add potatoes, carrotts, water, salt and black pepper.
Cover ans cook for 10-15 minutes , until vegetables are cooked.
Stir in the cod bites and cook for 10 minutes.
Add the velveeta type cheese and let melt.
Add the milk and heat without boiling.

Stir carefully before serving.
