Apple Crumb Spice Muffins

Ingredients
Spice Crumbs2 tbsp. packed brown sugar5 tsp. all-purpose flour1/2 tsp. cinnamon2 tsp. canola oilBatter2 cups whole wheat flour1/2 cup white sugar1 tbsp. baking powder1 tsp. cinnamon1/2 tsp. each salt, baking soda, and ground ginger2 medium apples (peeled, cored and chopped)2 eggs1 cup low fat plain yogurt1/3 cup canola oil
Directions
In a small bowl, stir together brown sugar, flour, cinnamon. Stir until crumbly. Set aside.

For the batter: In medium bowl and using a fork, stir together the flour, sugar, baking powder, cinnamon, salt, baking soda, and ginger until well mixed. Core apples and peel, chop into pieces no bigger than 1/2 inch.

In large bowl, whish together the eggs, yogurt and oil until blended; stir in flour mixture just until combined. Fold in apples until evenly distributed.

Spoon into prepared muffin cups. Sprinkle with spice crumb mixture.
Bake in 375F oven until deep golden brown and toothpick inserted in centre comes out clean, 18 to 22 minutes. Let stand for 5 minutes before removing from pan. Serve warm or let cool on rack. Enjoy!
