Clean Eating Strawberry Rhubarb Crisp

1 1/2 cup sliced rhubarb3 cup sliced strawberries1 tsp cinnamon3 T evaporated cane juiceJuice 1/2 lemon3 T spelt flourTopping:1/2 cup spelt flakes1/2 cup kamut flakes1/4 cup sucanat1/4 cup coconut oil2 T spelt flour2 tsp flaxseed1 tsp cinnamon
Preheat oven to 350 F. Toss fruit in 8 x 8 pan with cinnamon, lemon juice & evaporated cane juice. Sprinkle with flour and toss to coat.
Prepare topping by blending all ingredients together in medium bowl. Then spread over fruit. Place in oven and bake for 25-35 minutes or until topping is golden brown and fruit is bubbly.
