Ginger Tilapia

1/2 C Cider Vinegar1/4 C packed Brown Sugar2 tsp fresh grated ginger1/4 tsp salt2 medium cucumbers sliced4 x 4oz tilapia fillets1 6oz carton plain yogurt2 tbsp fresh mint (snipped)
1. Preheat broiler
2. In a medium bowl, stir together vinegar, brown sugar, ginger and salt until sugar is dissolved. Remove 1/4 C of mixture.
3. Add cucumbers to remaining vinegar mixture and toss.
4. Spray broiler pan with cooking spry
5. Arrange fish on rack, brush with reserved vinegar mixture (the 1/4 cup)
6. Broil 4" from heat for 4-6 minutes or unil fish flakes easily
7. In a bowl, combine yogurt and mix.
8. Plate with cucumbers (drain the vinegar mixture), then fish on top, then yogurt mixture on top.
Makes 4 servings.
