NFNS Banana Oat Muffins

Ingredients
2 cups oat bran1/4 cup old-fashioned rolled oats2 1/2 tsp baking powder1/4 tsp salt1/4 tsp ground cinnamonDash ground nutmeg2 ripe bananas, mashed2 eggs, lightly beaten1/2 cup nonfat milk2 Tbsp EV Olive Oil1/2 tsp vanilla extract1/2 cup nuts, chopped1 cup blueberries (unsweetened)
Directions
Preheat oven to 400F. Insert baking cups into 12 muffin tin.
In large bowl, combine oat bran, rolled oats, baking powder, salt, cinnamon and nutmeg.
In small bowl, beat together bananas, eggs, milk, oil and vanilla. Stir wet into dry ingredients until just blended. Then fold in nuts and blueberries. Divide batter evenly into muffin cups.
Bake 18-23 minutes, or until toothpick tests done. Serve warm or cold.
