Cottage Cheese Stuffed Manicotti

Ingredients
1/2 cup chopped onion1 clove garlich chopped1 tsp Italian seasoning1/4 tsp black pepper1 Tbsp Margarine1 16oz container 1 percent cottage cheese1 10 oz pk frozen chopped spinach cooked and drained1/2 cup egg beaters1 pkg barrilla manicotti shells cooked drained and cooled1 jar of Ragu sauce
Directions
In a large skillet sautee onion and garlic and seasoning/pepper in margarine until tender. Remove from heat. Mix together cottage cheese, spinach, parmesan, and egg beaters. add onion mixture and stir together until combined. Spread some sauce on the bottom of a 13x 9 " pan. Fill each manicotti shell some chesse mixture and arrange on the sauce. cover with remaining sauce and cover with foil. Bake in a 350* oven for 35-45 minutes until bubbly and hot. Top with additional parmesan if desired.
