Especially Good Zuchini Loaf

Ingredients
3 eggs, beaten3/4 cup vegetable oil2 cups sugar2 teaspoons cinnamon1 teaspoon vanilla extract2 cups shredded zuchini3 cups all-purpose flour2 teaspoons baking soda1 teaspoon baking powder1 teaspoon salt3/4 teaspoon nutmeg1/2 cup wheat germ1/4 cup sesame seed1/2 cup chopped walnuts1/2 cup pecans
Directions
Preheat oven to 350 degrees. Combine eggs, oil, sugar and cinnamon in large mixer bowl; beat until foamy. Stir in zucchini by hand. Combine flour, soda, baking powder, salt and nutmeg in bowl. Add to zucchini mixture; mix well. Stir in wheat germ and sesame seed. Add walnuts and pecans; mix well. Spoon into 2 greased and floured 4 x 8 inch loaf pans. Bake for 1 hour. Cool in pan for 10 minutes. Remove to wire rack to cool completely.

You can bake in Bundt pan at 350 for 70 - 80 mins.
