Tomatoes and Cottage Cheese

Ingredients
4 plum tomatoes2 cups Frisee lettuce, rinsed and dried1/2 cup low-fat cottage cheese1 Tbsp chopped chivesSpritz of sugar-free raspberry vinaigrette
Directions
Remove tomato tops. Place tomatoes upright and cut into four wedges, not all the way through. Place frisee on salad plate with tomato in center. Open and fan wedges down toward plate. Lightly spritz dressing over tomato. Fill with 1/4 cottage cheese. Garnish with chives and a dash of paprika.
