low calorie and low fat squash casserole

Ingredients
2 C summer squash cooked1/2 C butter1 C fat-free milk (I used smart balance)2 eggs (I used .5 C better 'n' eggs substitute)1 C grated cheese (would have used low fat)1 C Panko plain bread crumbs (original recipe calls for cracker crumbs - buttery kind)Salt & Pepper to taste
Directions
cook squash and mash with potato masher, add rest of ingredients and mix well - scoop into greased (PAM) 8x8 casserole dish and bake at 375 for 30 minutes - makes 12 servings

    This is good! I can use all yellow, but I like using a half and half mix of yellow and zucchini squash. My hubby is not a big veggie person,but likes this, too. - 6/9/20
