Pork Curry with Safferon rice

Ingredients
Pork Pieces 225 GramsOnion Large chopped400 Gr can of chopped tomatoes with herbs is goodFlour 1Tbls spoonCurry powder 1 tbspHot water approx 500 mlApple eating diced1/2 Red pepper1/2 Green pepperLarge scallion (Spring onion)Rice 100GrmsSaffron pinch
Directions
Put rice and saffron in pot cover with 5cm of boiling water return to boil reduce heat and simmer for 14mins. When cooked (test by taking a grain out squeezing it between fingers if soft rice cooked. Put rice in a sieve and rinse under cold running water and reserve in a bowl. It can be heated in micro for 3mins before serving.

Add olive oil to wok, fry the pork pieces, toss until coloured. Remove and reserve. Add onions, cook until softened, not browned, add flour over onions and curry powder. stir until flour curry powers and onions all go to yellow paste, onions remain same shape.
Now add how ater a little at a time stirring constantly as the water gets absorbed a smoth paste is forming keep adding until approx half the water is used.
Open the can of chopped tomatoes and add full can to wok, stir in tomatoes until blended in.
Add red and green peppers
Return the cooked pork pieces to the sauce and stir, add the chopped apple.
Add the chopped scallion
Cook for approx 30 mins on low heat stirring occasionally.
You can add any other veg you like

Fork over the rice and heat in a micro for 3mins put on one half of plate.
On other half of plate serve cooked Pork and curry.
You can add cooked chicken if prefer instead of pork.
