Muesli Muffins

Ingredients
1/2 cup Splenda1/4 cup Egg Beaters1 cup soy milk (I use Vanilla)1-1/2 cup Muesli Cereal2 cups Bisquick Heart Smart
Directions
Heat oven to 400F. Spray bottoms of 12 medium size muffin cups with non-stick cooking spray or use paper baking cups.

Combine Splenda, Egg Beaters, Soymilk and dry cereal in a mixing bowl. Stir until blended. Add Bisuick and stir quickly to moisten (batter will be lumpy. Fill each muffin cup evenly (about 3/4 full.) Bake on center oven rack for 18 minutes. Makes 12 muffins.
