Turkey and Spinach Panini

Ingredients
Mayo:1 tbsp Mayonnaise1 Garlic clove, mincedVeggie topping:1 tbsp olive oil1 cup Spinach5 slices onion5 cherry tomatoes2 oz soft goat cheese4 oz Turkey2-4" baguette piecesSalt & Pepper
Directions
Heat a panini press or cast-iron pan
Heat olive oil in a small skillet
Cook down the onion until soft, add the tomatoes and spinach.
Season with salt and pepper.

Layer sandwich with mayo, turkey, veggies and goat cheese

Cook in panini press
