Low fat Jalapeno Poppers

12 Jalapenos1 cup Meijer fat free refried beans ¼ cup- Veggie cheese shreds cheddar & pepper jack flavor 1 cup -Corn flakes- ground to crumbs 2 tabs - Egg beaters1 - Small finely chopped onion 2 tabs – Salsa
Directions-
Preheat oven to 350.
Put on rubber gloves. Cut peppers in ½. Spoon out seeds. Microwave peppers in a microwave safe dish for 2 minutes. Mix beans, cheese, onions & salsa together. Spoon into peppers.
Bake on baking sheet that has been sprayed with cooking spray. Arrange on baking sheet. Lightly Brush or spoon on egg beaters on each pepper. Sprinkle corn flake crumbs on each pepper.
Bake in oven for 15-20 minutes or until cheese is melted.
Makes 24 poppers
Serving size= ½ pepper
