Polenta Lasagna (william-sonoma vegeterian)

SPICY TOMATO SAUCE:1 or 2 tbsp olive oil2 garlic cloves minced11/2 cans of pettie diced tomatos drained2 tbs dried red pepper flakessalt and pepper18 oz (560 gr.) Precooked polenta1/2 cup ricotta cheese2 tbs pesto6 oz mozzarella cheese
4 servings of 1 to 1 1/2 cups
Spicy tomato sauce
In a sauce pan heat oil, add garlic and saute for 1 min
Add tomatoes, pepper flakes, salt and pepper
Simmer until thick
In a small bowl, stir together the ricotta and pesto. Season to taste with salt and pepper.
Cut the polenta into 16 slices.
layer the olenta slices and ricotta mix in the baking dish. Top with the tomato sauce and the mozzarella.
Bake until the cheese is melted and the lasagna hot.
