Zucchini Pancakes

Ingredients
2 small zucchini, shredded1 medium onion, shredded1/4C shredded parmesan cheese2 large eggs1/2C nonfat milk2C Bisquick1T garlic powder1T paprika1t black pepper1t unsalted butter
Directions
Mix all ingredients except butter together. Melt the butter in a hot pan, and cook scoops of zucchini mixture until golden brown on each side. This is a savory pancake side dish that pairs well with beef. Makes 14 pancakes.
