Kim's White Bean Tortellini Soup

Ingredients
2 tsp. extra virgin olive oil2 tsp. minced fresh garlic2 stalks celery, diced1small onion, diced8 c. water4 tsp. better than bouillon chicken base- low sodium2 tsp. better than bouillon vegetable soup base1/4 c. fresh basil, minced3-4 sprigs fresh thyme, pull leaves from stem and mince2 cans great northern beans, drained1 can fire roasted diced tomatoes2/4- 1 c. dried cheese tortellini (if using refrigerated pasta, cook as directed on pkg. and add to soup at end)10 oz. fresh spinachoptional- handful fresh parsley chopped
Directions
heat oil in large soup pan or dutch oven. Cook onion and celery until tender. Add garlic and cook an additional 1 minute, do not allow to brown. Add soup base and stir into veggies. When thoroughly coating veggies, add water. Bring to boil. Add tortellini, tomatoes and beans. Cook 10-12 minutes until pasta is tender. Stir in basil, thyme and spinach. Simmer until spinach has wilted. serve. approx 1 1/4 c + 1 serving.
top with shaved parmesan
