Cottage Cheese Scramble

Ingredients
2 large eggs1/4 cup of cottage cheese (non-fat or low fat may be substituted)1 wedge of a small onion, chopped (about 1/4 cup)1/2 a tomato, diced (about 1/4 cup)1 pat of butter (PAM may be used as a substitute)Salt and pepper to taste
Directions
In a bowl beat eggs and cottage cheese until bubbly. *Add about a tablespoon or two of water to make eggs lighter. In a non-stick pan, melt butter then add onions and tomato. Cook one minute then add egg mixture. Allow edges to firm. Add salt and pepper. Scramble as desired.
