Easy Turkey Soup

Ingredients
1 pkg onion soup mix, dry1 pkg mixed vegetables, frozen (10 oz)16 oz. ground turkey 93% lean3 cups frozen potatoes O'Brien with onion and peppers 1 lg can Swanson Chicken Broth 99% Fat Free, 6 cup1/2 cup barley, uncooked
Directions
Brown turkey (I sometimes cook the turkey in two cups of water and the onion soup mix. it cooks faster and the flavor of the soup mix blends with the meat.)
Combine browned turkey with the remaining ingredients and simmer until vegetables and potatoes are cooked through. Stir occasionally.
*I like to simmer the soup for long enough to reduce it and increase the thickness.
Serve with crackers or warm rolls and you have a meal.
