Mama Love's Lighter Cinnamon Rolls

Ingredients
1 cup milk (nutrition info uses 2% milk)1/2 cup oil (nutrition info uses sunflower oil)1/4 cup Splenda1/4 cup sugar3 eggs1 tsp salt1 Tbsp yeast (or 1 package/cake)1/4 cup lukewarm water2 1/4 cups wheat flour2 1/4 cups white flour1 stick margarine 1/2 cup Splenda sugar blend for bakingIcing:1 cup powdered sugar1/2 tsp vanilla extract1 tsp water
Directions
This is the same recipe for Mama Love's Lighter Dinner Rolls only turned into cinnamon rolls. I sometimes make half of the batch dinner rolls and the other half cinnamon rolls.

Scald milk, combined with oil, 1/2 cup splenda and 1/2 cup sugar. Set aside to cool completely.

In large bowl, beat eggs on high. Add milk mixture plus salt.

Dissolve yeast in 1/4 cup lukewarm water. Add to mixture. Reduce mixer speed and blend in both flours.

Cover and let rise until doubled.

Roll out dough on a floured surface. Spread with stick of melted margarine. Cover with Splenda sugar blend and sprinkle with cinnamon. Add raisins if desired (not included in nutritional info). Roll up and cut in 3/4 inch slices. Place on cookie sheet with sides or rectangular cake pan, sides of cinnamon rolls touching.

Bake 15 to 20 minutes at 350 degrees.

For icing: mix 1 cup powdered sugar, 1/2 tsp vanilla extract, and 1 tsp water (more if it is too thick)

Makes approx. 36 cinnamon rolls.

    I really liked the idea about making half the recipe hot rolls and half the recipe cinnamon rolls. It was perfect. Everyone liked it. If there was only 12 needed for each meal, you could make 1/3 cinnamon, 1/3 hot rolls, and 1/3 dumplins for supper. Thank you! - 1/18/10

    Made these this morning as a Valentine's Day breakfast, rolling them into heart shapes instead of circles. They were delicious, and got rave reviews from my family!

    No one has mentioned the typo in this recipe. The ingredient list calls for 1/4 cup Splenda and 1/4 cup sugar. The directions call for 1/2 cup Splenda and 1/2 cup sugar. Which is it? 1/4 cup or 1/2 cup? - 11/18/11

    While I'm sure I didn't make them perfectly, I was confused when it came to the directions. For example, yeast has to be mixed with a liquid that is about 120 degrees, but the "lukewarm" water doesn't achieve this, and the milk mix has "cooled completely." Turned out ok, but not amazing. - 1/11/09
