Beer-Battered Onion Rings with Spicy Russian Sauce

Onion Rings:- 1/4 cup all-purpose flour (for rings)- One large onion, cut into 1/2-inch rings and separated- 1/2 cup all-purpose flour (for batter)- 1/2 cup rice flour- 1 tsp. baking powder- 1 tsp. salt- 1 cup light beer, at room temperatureSpicy Russian Sauce:- 3/4 cup olive oil- 1/4 cup red wine vinegar- 1 egg yolk- 2 tsp. dijon mustard- 2 tsp. tomato paste- 1 Tbsp. chili sauce (like sriracha)- 1 Tbsp. prepared horseradish- 2 garlic cloves, minced- 1 oz. onion, diced- 1/2 tsp. salt- 1/8 tsp. black pepper
Onion Rings:
1. Put the 1/4 cup of flour in a paper bag and add onion rings. Close bag and shake lightly to coat. Set aside.
2. Combine all the dry ingredients in a medium bowl, add the beer, and stir well to make the batter (it should be approx. as thick as pancake batter).
3. Heat approx. 1 inch of vegetable oil in a skillet to 365 degrees. Remove the onions from bag, shaking lighting to remove excess flour. Dip, one at a time, in the batter, and gently lay them in the oil. Don't overcrowd them or they won't crisp up well.
4. When onion rings are lightly brown on one side, flip over and fry until golden brown.
5. Remove onion rings from the oil and place on a paper-towel lined plate to drain. Sprinkle lightly with salt.
6. Allow the oil to get back up to 365 degrees and fry the remaining rings. If the batter in the bowl thickens, just add a little more beer.
Spicy Russian Sauce:
1. Separate the egg, add yolk and vinegar in a tall, narrow container. Blend with immersion blender until smooth. Add the oil and blend again. Add the rest of the ingredients and process until smooth. Serve!
