Mexican Lasagna

6 corn tortillas4 Morningstar Farms Grillers orginal patties1.5 cups frozen corn2 cup chopped tomatos1 medium onion chopped2 tablespoons vegan butter1/2 a jalapeno pepper or whatever spicy pepper you like2 tablespoon flour or whatever thickening agent you like
Cook the Marningstar Vegan patties as directed on package, once cooked chop up in to small pieces to resemble ground beef. Add 1/2 onion and frozen, season to taste and let cook for about 10 minute or until heated through
In seperate skillet saute onions and pepper until soft- add vegan butter and flour to create a roux- then add tomatos and 1/4 cup water, stir and cover- let simmer until thickened.
Take cassarole dish and add 1/3 of meat mixture, 1/3 of sauce and 2 tortilla broken into pieces. continue alternateing meat sauce and tortillas- try to end with tortillas and top with sauce
Back in 375 oven till bubbly and brown
