1 tsp olive oilHalf medium onion chopped3 cloves garlic1 tbsp curry powder2 cups (med head) cauliflower florets1 can (15 oz) tomato sauce1 can (15 oz) diced tomatoes1 can (15 oz) garbanzo beans, drained and rinsed
Makes 6 1-cup servings
In saute pan, cook the chopped onion over medium heat until translucent. Add the garlic and allow to cook for 30 seconds. Add the curry powder and cook for an additional 15 seconds. Add the tomato sauce and chopped tomatoes, then the cauliflower florets. Allow to simmer until the florets are softened, then add the drained garbanzo beans. Cook for an additional 2-3 minutes. Remove from heat and serve.
