simply baked catfish

Ingredients
2 lbs. catfish fillets, rinsed ( do not dry)2 lemons, cut into wedges2 cups milk (non-fat calculated)2 cups seasoned bread crumbs4 tbsp. margarine.5 tbsp. hot red pepper flakessalt - tastefresh ground pepper- to taste
Directions
While catfish fillets are soaking in milk and oven is pre-heating to 500 degrees F, mix bread crumbs with red pepper flakes, salt, and pepper; then dredge fillets in bread crumbs until completely covered. Put 2 tbsp. margarine in large skillet and add fillets, with remaining margarine drizzle over top. Bake near the top of oven ( 8 - 10 minutes);
fish is done when it flakes easily when tested with a fork. Serve hot with lemon wedges.
