Zone Diet Hashbrown Scramble

Ingredients
1/2c broccoli, chopped1/2c egg beaters1 piece Oscar Meyer center cut bacon1 Tbsp shredded cheddar1 tsp oil1/2c hashbrowns (about 1.5 oz)(I use Kroger brand hashbrowns from Costco.)Make sure to serve with:1c halved strawberries PER SERVINGMacronutrient breakdown:38.9% carbs, 30.3% protein, 30.8% fat
Directions
Steam the broccoli. Microwave the bacon or cook it in a small separate pan. Crumble the bacon once it's done. Heat the oil in the bottom of a larger pan and add the hashbrowns. Cook about 8-10 minutes per side or until properly browned. Add the crumbled bacon and broccoli. Then add the egg beaters and stir constantly until fully cooked (at that heat, this will probably be very fast so keep stirring!). Transfer to a plate and sprinkle the cheese on top.
