Shirataki Mulligatawny Soup

Ingredients
3/4 cup diced potato3/4 cup diced carrots1/2 cup diced celery1/2 cup diced onion3.5 cups low sodium chicken broth1 tsp curry powderdash salt1/4 tsp black pepper1/4 tsp thyme1 lb boneless, skinless chicken breast, cooked and diced1/2 cup diced apples3/4 cup diced carrots1 tsp lemon zest2 bags shirataki noodles
Directions
Place first 5 ingredients in a pot. Bring to a boil.
Cover and simmer until veggies are soft, about 15 minutes.
Transfer to a blender, puree until smooth, return to pot.
Stir in curry, salt, pepper and thyme.
Add apples, chicken, lemon zest and carrots. Heat an additional ten minutes.
Meanwhile, rinse shirataki noodles and heat in microwave for 10 minutes (to diffuse odor).
Add noodles to soup.
Heat through and serve.
