LOWFAT VEGETARIAN BREAKFAST QUICHE

Ingredients
1 medium white onion1 cup egg subsitute1 cup skim milk or lactaid skim milk1/2 cup whole wheat flour8 slices morning star veggie bacon1/2 cup veggie slices cheddar soy cheese2 oz baby spinach1/2 tsp baking powder1/2 tsp crushed red pepper or to taste1/2 tsp garlic powder1/2 tsp onion powdersea salt, black pepper, to taste
Directions
Makes 6 servings
Preheat oven to 400
Place veggie bacon on tray and cook for about 5 minutes...checking to make sure it is not overdone
Chop up medium onion and saute until translucent
Add the spinach until wilted then take off the heat
Mix together egg subsitute, skim milk, whole wheat flour, and baking powder
After veggie bacon is cooked chop up and add veggie bacon, spinach, and onion to egg mixture
Add onion and garlic powder
Add crushed red pepper, sea salt, and black pepper to taste
Place in sprayed 8 in pan
cook for 15- 20 minutes depending on strength of oven..
It is cooked when knife inserted in the middle comes out clean....
THEN EAT AND ENJOY!!
