Crab cakes (wheat, dairy & egg free)

425gr Crab meat, 500gr new potatoes (skin on), boiled and mashed, 1 tbsp egg free mayo, 1 spring onion finely chopped, 1 tbsp chives finely chopped, 1 small hot chili pepper (de-seeded and finely chopped), olive oil for cooking
Boil potatoes until very soft, drain then mash.
Add all other ingredients.
Form into 10 balls of even size, then shallow fry in a small amount of butter or oil until browned on each side
Great served with a seasonal salad
