Quinoa Mushroom Casserole

1 onion, chopped2 cloves of garlic, minced1 cup mushrooms, sliced 1 tbs olive oil1 tbs cilantro, chopped1 cup quinoa rice2 cups vegetable broth
1. Heat the oil in a large saucepan and brown onion and mushrooms for about five minutes.
2. Add one quinoa and stir to coat grains in oil.
3. Add broth and remaining ingredients and bring to a boil, then turn down to a simmer on low heat.
4. Simmer until all liquid is absorbed, stirring periodically.
