Corn and Black Bean Salad

2 C shredded cheddar cheese4 C romaine lettuce, shredded1-16 oz. package frozen corn, thawed2 bell peppers, chopped (1 1/2-2 C)1 jalapeno pepper, chopped after seeds removed1/2 C thinly sliced red onion (or sweet vidalia)1/2 C reduced fat mayonnaise such as Hellman's Light1/4 C fresh cilantro or parsley, chopped1 can black beanssalt and pepper to taste3 C corn chips, such as fritos
In a large bowl, mix the cheese, lettuce, corn, peppers, jalapeno, onion, beans, mayo and cilantro. Season with salt and pepper. Just before serving, top with corn chips.
Makes 4 servings.
To reduce calories, fat and carbohydrates, serve without corn chips.
